  • Zucchini - 1 medium, sliced
  • Tomatoes - 400 grams, diced (canned or fresh)
  • Vegetable broth - 500 ml
  • Saffron threads - 0.5 grams
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Fennel bulb - 1 small, sliced
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish
  • Lemon wedges - for serving

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  2. Add the sliced carrot, diced celery, and chopped red bell pepper to the pot. Cook for about 5 minutes, stirring occasionally.
  3. Stir in the sliced zucchini and fennel. Cook for another 3-4 minutes until slightly softened.
  4. Add the diced tomatoes, vegetable broth, saffron, thyme, bay leaf, salt, and black pepper. Bring the mixture to a gentle simmer.
  5. Reduce the heat to low and let the bouillabaisse simmer for 20-25 minutes, allowing the flavors to meld together.
  6. Taste and adjust seasoning if necessary. Remove the bay leaf before serving.
