- Zucchini - 1 medium, sliced
- Tomatoes - 400 grams, diced (canned or fresh)
- Vegetable broth - 500 ml
- Saffron threads - 0.5 grams
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Fennel bulb - 1 small, sliced
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
- Lemon wedges - for serving
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the sliced carrot, diced celery, and chopped red bell pepper to the pot. Cook for about 5 minutes, stirring occasionally.
- Stir in the sliced zucchini and fennel. Cook for another 3-4 minutes until slightly softened.
- Add the diced tomatoes, vegetable broth, saffron, thyme, bay leaf, salt, and black pepper. Bring the mixture to a gentle simmer.
- Reduce the heat to low and let the bouillabaisse simmer for 20-25 minutes, allowing the flavors to meld together.
- Taste and adjust seasoning if necessary. Remove the bay leaf before serving.
- Ladle the vegetable bouillabaisse into bowls, garnish with fresh parsley, and serve with lemon wedges on the side.
