Ingredients

  • All-purpose flour - 200 grams
  • Olive oil - 50 ml
  • Water - 75 ml
  • Seaweed flakes (nori or dulse) - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Shallots - 2, finely chopped
  • Zucchini - 100 grams, diced
  • Carrot - 100 grams, grated
  • Cherry tomatoes - 100 grams, halved
  • Artichoke hearts (canned) - 100 grams, drained and chopped
  • Capers - 1 tablespoon, rinsed
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. In a mixing bowl, combine the flour, olive oil, and water to form a dough. Knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  2. In a skillet over medium heat, add a splash of olive oil and sauté the shallots until translucent. Add the zucchini, carrot, and cherry tomatoes; cook for about 5-7 minutes until softened.
  3. Stir in the artichoke hearts, capers, seaweed flakes, smoked paprika, garlic powder, black pepper, and salt. Cook for another 5 minutes, then remove from heat and mix in the chopped parsley.
  4. Preheat your oven to 180°C (350°F). Roll out the dough on a floured surface into two circles, about 0.5 cm thick.
  5. Place one circle of dough on a baking tray lined with parchment paper. Spoon the filling onto the center, leaving a border around the edges.
  6. Cover with the second circle of dough, pressing the edges to seal. Cut a few slits on top for steam to escape.
  7. Bake in the preheated oven for 25-30 minutes or until golden brown. Allow to cool slightly before serving.
