Ingredients
- All-purpose flour - 200 grams
- Olive oil - 50 ml
- Water - 75 ml
- Seaweed flakes (nori or dulse) - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Shallots - 2, finely chopped
- Zucchini - 100 grams, diced
- Carrot - 100 grams, grated
- Cherry tomatoes - 100 grams, halved
- Artichoke hearts (canned) - 100 grams, drained and chopped
- Capers - 1 tablespoon, rinsed
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - to taste
- Salt - to taste
Steps
- In a mixing bowl, combine the flour, olive oil, and water to form a dough. Knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- In a skillet over medium heat, add a splash of olive oil and sauté the shallots until translucent. Add the zucchini, carrot, and cherry tomatoes; cook for about 5-7 minutes until softened.
- Stir in the artichoke hearts, capers, seaweed flakes, smoked paprika, garlic powder, black pepper, and salt. Cook for another 5 minutes, then remove from heat and mix in the chopped parsley.
- Preheat your oven to 180°C (350°F). Roll out the dough on a floured surface into two circles, about 0.5 cm thick.
- Place one circle of dough on a baking tray lined with parchment paper. Spoon the filling onto the center, leaving a border around the edges.
- Cover with the second circle of dough, pressing the edges to seal. Cut a few slits on top for steam to escape.
- Bake in the preheated oven for 25-30 minutes or until golden brown. Allow to cool slightly before serving.
