Ingredients
- Potatoes - 500 grams, thinly sliced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cashews - 100 grams, soaked for 4 hours and drained
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Plant-based milk (unsweetened) - 100 ml
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat and add the sliced onions. Sauté until they are soft and caramelized, about 10 minutes.
- Add minced garlic to the onions and cook for another 2 minutes until fragrant.
- In a blender, combine soaked cashews, nutritional yeast, lemon juice, plant-based milk, smoked paprika, salt, and black pepper. Blend until smooth and creamy.
- In a baking dish, layer half of the sliced potatoes at the bottom. Spread half of the caramelized onion and garlic mixture on top, then pour half of the cashew cream over it.
- Repeat the layers with the remaining potatoes, onions, and cashew cream.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes or until the top is golden and the potatoes are tender.
- Garnish with fresh parsley before serving.
