Ingredients

  • Puff pastry - 200 grams
  • Apples (Granny Smith or similar) - 3 medium, sliced
  • Brown sugar - 100 grams
  • Coconut oil - 50 grams
  • Cinnamon - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, melt the coconut oil over medium heat.
  3. Add the sliced apples, brown sugar, cinnamon, lemon juice, vanilla extract, and salt to the skillet. Stir to coat the apples evenly.
  4. Cook for about 10-15 minutes, until the apples are soft and the sugar has melted to form a caramel sauce.
  5. Remove the skillet from heat and let the mixture cool for a few minutes.
  6. Roll out the puff pastry on a lightly floured surface to fit your skillet size. Place the pastry over the caramelized apples, tucking the edges down the sides of the skillet.
  7. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.
  8. Remove from the oven and let it cool for 5 minutes before inverting onto a serving plate.
  9. Serve warm and enjoy your Vegan Tarte Tatin.
