- All-purpose flour - 150g
- Vegan butter - 75g
- Powdered sugar - 30g
- Cold water - 2 tbsp (30ml)
- Almond milk - 200ml
- Cornstarch - 2 tbsp (30g)
- Vanilla extract - 1 tsp (5ml)
- Maple syrup - 2 tbsp (30ml)
- Seasonal fruits (e.g. strawberries, kiwi, blueberries, banana) - 200g
- Lemon juice - 1 tsp (5ml)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and powdered sugar.
- Add the vegan butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until the dough comes together.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- While the dough chills, prepare the vegan custard by whisking together almond milk, cornstarch, vanilla extract, and maple syrup in a saucepan over medium heat.
- Continue whisking until the mixture thickens, then remove from heat and let it cool slightly.
- Roll out the chilled dough on a floured surface and fit it into a tart pan, trimming any excess.
- Prick the bottom of the crust with a fork and bake for 15 minutes or until golden.
- Once the crust has cooled, pour the vegan custard into the tart shell, spreading it evenly.
- Prepare the seasonal fruits by slicing them as needed and tossing them with lemon juice to prevent browning.
- Arrange the fruits beautifully on top of the custard.
- Refrigerate the tart for at least 15 minutes before serving to allow it to set.
