Ingredients

  • All-purpose flour - 150g
  • Vegan butter - 75g
  • Powdered sugar - 30g
  • Cold water - 2 tbsp (30ml)
  • Almond milk - 200ml
  • Cornstarch - 2 tbsp (30g)
  • Vanilla extract - 1 tsp (5ml)
  • Maple syrup - 2 tbsp (30ml)
  • Seasonal fruits (e.g. strawberries, kiwi, blueberries, banana) - 200g
  • Lemon juice - 1 tsp (5ml)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and powdered sugar.
  3. Add the vegan butter and mix until the mixture resembles coarse crumbs.
  4. Gradually add cold water, mixing until the dough comes together.
  5. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  6. While the dough chills, prepare the vegan custard by whisking together almond milk, cornstarch, vanilla extract, and maple syrup in a saucepan over medium heat.
  7. Continue whisking until the mixture thickens, then remove from heat and let it cool slightly.
  8. Roll out the chilled dough on a floured surface and fit it into a tart pan, trimming any excess.
  9. Prick the bottom of the crust with a fork and bake for 15 minutes or until golden.
  10. Once the crust has cooled, pour the vegan custard into the tart shell, spreading it evenly.
  11. Prepare the seasonal fruits by slicing them as needed and tossing them with lemon juice to prevent browning.
  12. Arrange the fruits beautifully on top of the custard.
  13. Refrigerate the tart for at least 15 minutes before serving to allow it to set.
