  • Coconut oil - 50 grams (melted)
  • Maple syrup - 30 grams
  • Salt - 1/4 teaspoon
  • Lemon juice - 60 milliliters
  • Lemon zest - 1 tablespoon
  • Coconut cream - 100 grams
  • Cornstarch - 30 grams
  • Agar-agar powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Powdered sugar - 20 grams (for dusting)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until a dough forms.
  3. Press the dough into a 20 cm (8 inch) tart pan evenly across the bottom and up the sides. Prick the base with a fork.
  4. Bake the crust in the preheated oven for 15 minutes or until lightly golden. Remove and let it cool.
  5. In a saucepan, whisk together lemon juice, lemon zest, coconut cream, cornstarch, and agar-agar. Heat over medium heat until it thickens, stirring constantly.
  6. Once thickened, remove from heat and stir in vanilla extract. Allow the mixture to cool slightly.
  7. Pour the lemon filling into the cooled tart crust, smoothing the top with a spatula.
  8. Refrigerate for at least 30 minutes to set.
  9. Once set, dust with powdered sugar before serving.
