- Salt - 1/4 teaspoon
- Lemon juice - 60 milliliters
- Lemon zest - 1 tablespoon
- Coconut cream - 100 grams
- Cornstarch - 30 grams
- Agar-agar powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Powdered sugar - 20 grams (for dusting)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until a dough forms.
- Press the dough into a 20 cm (8 inch) tart pan evenly across the bottom and up the sides. Prick the base with a fork.
- Bake the crust in the preheated oven for 15 minutes or until lightly golden. Remove and let it cool.
- In a saucepan, whisk together lemon juice, lemon zest, coconut cream, cornstarch, and agar-agar. Heat over medium heat until it thickens, stirring constantly.
- Once thickened, remove from heat and stir in vanilla extract. Allow the mixture to cool slightly.
- Pour the lemon filling into the cooled tart crust, smoothing the top with a spatula.
- Refrigerate for at least 30 minutes to set.
- Once set, dust with powdered sugar before serving.
