  • Garlic - 2 cloves, minced
  • Vegetable broth - 500ml
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Baguette - 2 slices
  • Vegan cheese - 50g (optional)
  • Fresh parsley - for garnish

Steps

  1. Peel and thinly slice the yellow onions.
  2. In a large pot, heat the olive oil over medium heat. Add the sliced onions and sauté for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.
  3. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Pour in the vegetable broth and add the dried thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 20 minutes.
  5. While the soup simmers, preheat the oven to 200°C (390°F). Toast the baguette slices until they are golden and crispy.
  6. Once the soup has finished cooking, remove the bay leaf. Taste and adjust seasoning if necessary.
  7. Ladle the soup into bowls, top each with a slice of toasted baguette, sprinkle with vegan cheese if desired, and garnish with fresh parsley.
