- Garlic - 2 cloves, minced
- Vegetable broth - 500ml
- Dried thyme - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Baguette - 2 slices
- Vegan cheese - 50g (optional)
- Fresh parsley - for garnish
Steps
- Peel and thinly slice the yellow onions.
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and sauté for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Pour in the vegetable broth and add the dried thyme, bay leaf, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 20 minutes.
- While the soup simmers, preheat the oven to 200°C (390°F). Toast the baguette slices until they are golden and crispy.
- Once the soup has finished cooking, remove the bay leaf. Taste and adjust seasoning if necessary.
- Ladle the soup into bowls, top each with a slice of toasted baguette, sprinkle with vegan cheese if desired, and garnish with fresh parsley.
