Ingredients

  • Silken tofu - 200 grams
  • Nutritional yeast - 3 tablespoons
  • Almond milk - 1/4 cup
  • Olive oil - 1 tablespoon
  • All-purpose flour - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Fresh spinach - 50 grams, chopped
  • Fresh chives - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and lightly grease two ramekins with olive oil.
  2. In a blender, combine the silken tofu, nutritional yeast, almond milk, olive oil, flour, baking powder, garlic powder, onion powder, salt, and black pepper. Blend until smooth and creamy.
  3. In a mixing bowl, fold in the chopped spinach and chives into the tofu mixture until evenly distributed.
  4. Pour the mixture evenly into the prepared ramekins, filling them about three-quarters full.
  5. Place the ramekins on a baking tray and bake in the preheated oven for 25-30 minutes, or until the tops are golden and slightly puffed.
