- Silken tofu - 200 grams
- Nutritional yeast - 3 tablespoons
- Almond milk - 1/4 cup
- Olive oil - 1 tablespoon
- All-purpose flour - 2 tablespoons
- Baking powder - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Onion powder - 1/2 teaspoon
- Fresh spinach - 50 grams, chopped
- Fresh chives - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F) and lightly grease two ramekins with olive oil.
- In a blender, combine the silken tofu, nutritional yeast, almond milk, olive oil, flour, baking powder, garlic powder, onion powder, salt, and black pepper. Blend until smooth and creamy.
- In a mixing bowl, fold in the chopped spinach and chives into the tofu mixture until evenly distributed.
- Pour the mixture evenly into the prepared ramekins, filling them about three-quarters full.
- Place the ramekins on a baking tray and bake in the preheated oven for 25-30 minutes, or until the tops are golden and slightly puffed.
