Vegan Socca
Vegan Socca is a delightful chickpea flour pancake, infused with herbs and spices, perfect for grilling at a BBQ. This dish is crispy on the outside and tender on the inside, offering a savory taste of Provence.

- Chickpea flour - 100 grams
- Water - 250 milliliters
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Cherry tomatoes - 100 grams, halved
- Zucchini - 100 grams, sliced
- Red onion - 50 grams, thinly sliced
Steps
- In a mixing bowl, combine the chickpea flour, water, olive oil, ground cumin, smoked paprika, salt, and black pepper. Mix until smooth and let it rest for 15 minutes.
- Preheat your BBQ grill on medium-high heat and lightly oil the grill grates.
- Stir in the chopped rosemary and thyme into the batter.
- Pour half of the batter onto the grill, spreading it evenly into a circle about 1 cm thick. Cook for 5-7 minutes until the edges are crispy and the top starts to bubble.
- Carefully flip the socca using a spatula and cook for another 5-7 minutes until both sides are golden brown.
- Remove the socca from the grill and keep warm. Repeat with the remaining batter.
- In a separate bowl, toss the cherry tomatoes, zucchini, and red onion with a little olive oil, salt, and pepper. Grill them for 5-7 minutes until tender.
- Serve the socca topped with the grilled vegetables and drizzle with extra olive oil if desired.
