Vegan Socca

Vegan Socca is a delightful chickpea flour pancake, infused with herbs and spices, perfect for grilling at a BBQ. This dish is crispy on the outside and tender on the inside, offering a savory taste of Provence.

Ingredients

  • Chickpea flour - 100 grams
  • Water - 250 milliliters
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Cherry tomatoes - 100 grams, halved
  • Zucchini - 100 grams, sliced
  • Red onion - 50 grams, thinly sliced

Steps

  1. In a mixing bowl, combine the chickpea flour, water, olive oil, ground cumin, smoked paprika, salt, and black pepper. Mix until smooth and let it rest for 15 minutes.
  2. Preheat your BBQ grill on medium-high heat and lightly oil the grill grates.
  3. Stir in the chopped rosemary and thyme into the batter.
  4. Pour half of the batter onto the grill, spreading it evenly into a circle about 1 cm thick. Cook for 5-7 minutes until the edges are crispy and the top starts to bubble.
  5. Carefully flip the socca using a spatula and cook for another 5-7 minutes until both sides are golden brown.
  6. Remove the socca from the grill and keep warm. Repeat with the remaining batter.
  7. In a separate bowl, toss the cherry tomatoes, zucchini, and red onion with a little olive oil, salt, and pepper. Grill them for 5-7 minutes until tender.
  8. Serve the socca topped with the grilled vegetables and drizzle with extra olive oil if desired.
