  • Green beans - 100 grams
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 small, diced
  • Red onion - 1/4, thinly sliced
  • Chickpeas - 200 grams, canned or cooked
  • Black olives - 50 grams, pitted and sliced
  • Fresh basil - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Blanch the green beans in boiling water for 3-4 minutes until bright green and tender-crisp, then transfer to an ice bath to stop cooking.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, chickpeas, black olives, and blanched green beans.
