- Olive oil - 2 tablespoons
- Fresh basil - 10g, chopped
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 0.5 liters
- Baguette - 1 small, for serving
Steps
- Heat olive oil in a large skillet over medium heat.
- Add diced red onion and minced garlic; sauté for 3-4 minutes until softened.
- Stir in diced eggplant and cook for another 5 minutes until it begins to soften.
- Add the zucchini, red bell pepper, and yellow bell pepper; sauté for 5-7 minutes until all vegetables are tender.
- Pour in the crushed tomatoes and water, and stir to combine.
- Season with salt, black pepper, and thyme; bring to a simmer.
- Reduce heat to low, cover, and let it cook for 15-20 minutes, stirring occasionally.
- Once cooked, stir in fresh basil and adjust seasoning if necessary.
- Serve warm with slices of fresh baguette on the side.
