  • Tomatoes - 400g canned, crushed
  • Olive oil - 2 tablespoons
  • Fresh basil - 10g, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 0.5 liters
  • Baguette - 1 small, for serving

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced red onion and minced garlic; sauté for 3-4 minutes until softened.
  3. Stir in diced eggplant and cook for another 5 minutes until it begins to soften.
  4. Add the zucchini, red bell pepper, and yellow bell pepper; sauté for 5-7 minutes until all vegetables are tender.
  5. Pour in the crushed tomatoes and water, and stir to combine.
  6. Season with salt, black pepper, and thyme; bring to a simmer.
  7. Reduce heat to low, cover, and let it cook for 15-20 minutes, stirring occasionally.
  8. Once cooked, stir in fresh basil and adjust seasoning if necessary.
  9. Serve warm with slices of fresh baguette on the side.
