- cold water - 50 ml
- olive oil - 30 ml
- firm tofu - 200 grams
- nori seaweed (dried) - 10 grams
- wakame seaweed (dried) - 10 grams
- nutritional yeast - 2 tablespoons
- garlic powder - 1 teaspoon
- turmeric powder - 1/2 teaspoon
- black salt (kala namak) - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- spinach (fresh) - 100 grams
- cherry tomatoes - 100 grams
- olive oil (for greasing) - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine whole wheat flour, olive oil, and cold water to form a dough. Knead gently until smooth, then wrap in plastic wrap and let it rest for 15 minutes.
- Soak nori and wakame seaweed in warm water for about 10 minutes, then drain and chop finely.
- In a blender, combine firm tofu, nutritional yeast, garlic powder, turmeric powder, black salt, and black pepper. Blend until smooth and creamy.
- In a skillet, sauté fresh spinach until wilted, then add the chopped seaweed and mix well.
- Fold the sautéed mixture into the blended tofu mixture until well combined.
- Roll out the rested dough and fit it into a greased tart pan, trimming the edges.
- Pour the tofu and seaweed filling into the crust, spreading it evenly. Top with halved cherry tomatoes.
- Bake in the preheated oven for 25-30 minutes, or until the quiche is firm and slightly golden on top.
- Let it cool for a few minutes before slicing. Serve warm or at room temperature.
