  • Garlic - 2 cloves, minced
  • Black olives - 100 grams, pitted and sliced
  • Cherry tomatoes - 100 grams, halved
  • Thyme - 1 teaspoon, dried
  • Basil - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large skillet, heat the olive oil over medium heat and add the sliced onions. Cook, stirring occasionally, for about 15 minutes until they are soft and caramelized.
  3. Add the minced garlic to the onions and cook for an additional 2 minutes until fragrant. Season with salt, black pepper, thyme, and basil.
  4. Roll out the vegan pastry dough on a lightly floured surface to fit a 9-inch tart pan. Place the dough in the tart pan and prick the bottom with a fork.
  5. Spread the caramelized onion mixture evenly over the pastry base.
  6. Top with the sliced black olives and halved cherry tomatoes, arranging them evenly over the onions.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
