Ingredients
- Basmati rice - 150 grams
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Red bell pepper - 1, diced
- Green peas - 100 grams, frozen
- Cherry tomatoes - 150 grams, halved
- Artichoke hearts - 100 grams, canned or frozen, quartered
- Seaweed flakes (like nori or dulse) - 1 tablespoon
- Saffron threads - a pinch
- Smoked paprika - 1 teaspoon
- Black salt - 1/2 teaspoon
- Fresh parsley - for garnish
- Lemon - 1, cut into wedges
Steps
- In a large pan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes until the pepper softens.
- Add the basmati rice to the pan, stirring to coat the grains in the oil and vegetables. Cook for 1-2 minutes until the rice is slightly toasted.
- Pour in the vegetable broth and add the saffron threads, smoked paprika, and black salt. Bring to a boil, then reduce to a simmer and cover the pan.
- Cook for 15 minutes, then add the green peas, cherry tomatoes, and artichoke hearts. Stir gently to combine, cover, and cook for another 5-7 minutes until the rice is tender and the liquid is absorbed.
- Stir in the seaweed flakes for a hint of ocean flavor, then remove from heat and let it sit for 5 minutes, covered.
- Serve warm, garnished with fresh parsley and lemon wedges on the side.
