- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Onion - 1 small, finely chopped
- Garlic - 3 cloves, minced
- Saffron threads - 0.1 grams
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Frozen peas - 100 grams
- Artichoke hearts - 100 grams, quartered
- Zucchini - 1 small, diced
- Cherry tomatoes - 100 grams, halved
- Seaweed flakes (nori or dulse) - 1 tablespoon
- Lemon - 1, cut into wedges for serving
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the garlic, diced red and green bell peppers, and zucchini. Cook for another 5 minutes until the vegetables soften.
- Add the Arborio rice to the skillet and stir to coat with the oil and vegetables for about 2 minutes.
- Dissolve the saffron in a small amount of warm vegetable broth and add it to the skillet. Then pour in the remaining vegetable broth, smoked paprika, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
- Gently fold in the frozen peas, artichoke hearts, and cherry tomatoes. Cook for an additional 5 minutes, uncovered, until everything is heated through.
- Sprinkle seaweed flakes over the paella and garnish with fresh parsley before serving.
- Serve with lemon wedges for an extra burst of flavor.
