  • Arborio rice - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Onion - 1 small, finely chopped
  • Garlic - 3 cloves, minced
  • Saffron threads - 0.1 grams
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Frozen peas - 100 grams
  • Artichoke hearts - 100 grams, quartered
  • Zucchini - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Seaweed flakes (nori or dulse) - 1 tablespoon
  • Lemon - 1, cut into wedges for serving
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the garlic, diced red and green bell peppers, and zucchini. Cook for another 5 minutes until the vegetables soften.
  3. Add the Arborio rice to the skillet and stir to coat with the oil and vegetables for about 2 minutes.
  4. Dissolve the saffron in a small amount of warm vegetable broth and add it to the skillet. Then pour in the remaining vegetable broth, smoked paprika, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. Gently fold in the frozen peas, artichoke hearts, and cherry tomatoes. Cook for an additional 5 minutes, uncovered, until everything is heated through.
  7. Sprinkle seaweed flakes over the paella and garnish with fresh parsley before serving.
  8. Serve with lemon wedges for an extra burst of flavor.
