Ingredients

  • All-purpose flour - 200 grams
  • Vegan butter - 100 grams
  • Cold water - 60 ml
  • Mushrooms (finely chopped) - 150 grams
  • Green lentils (cooked) - 100 grams
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Walnuts (chopped) - 50 grams
  • Fresh thyme - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Plant-based milk - 2 tablespoons (for egg wash)

Steps

  1. In a mixing bowl, combine all-purpose flour and salt. Cut in vegan butter until the mixture resembles coarse crumbs. Gradually add cold water and mix until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  2. In a skillet over medium heat, sauté onions and garlic until translucent. Add chopped mushrooms and cook until they release their moisture and become golden brown.
  3. Stir in cooked lentils, walnuts, thyme, soy sauce, nutritional yeast, salt, and pepper. Cook for a few more minutes, then remove from heat and let cool.
  4. Preheat the oven to 200°C (400°F). On a floured surface, roll out the chilled dough to fit a small loaf pan. Leave some excess dough for the top.
  5. Line the loaf pan with the rolled-out dough, allowing the edges to hang over. Fill with the mushroom-lentil mixture, packing it down gently.
  6. Roll out the remaining dough and place it over the filling, sealing the edges tightly. Cut a few slits in the top for steam to escape and brush with plant-based milk for a golden finish.
  7. Bake in the preheated oven for 30-35 minutes or until the crust is golden brown. Let cool for 10 minutes before slicing.
