- Cold water - 60 ml
- Mushrooms (finely chopped) - 150 grams
- Green lentils (cooked) - 100 grams
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Walnuts (chopped) - 50 grams
- Fresh thyme - 1 teaspoon
- Soy sauce - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Plant-based milk - 2 tablespoons (for egg wash)
Steps
- In a mixing bowl, combine all-purpose flour and salt. Cut in vegan butter until the mixture resembles coarse crumbs. Gradually add cold water and mix until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a skillet over medium heat, sauté onions and garlic until translucent. Add chopped mushrooms and cook until they release their moisture and become golden brown.
- Stir in cooked lentils, walnuts, thyme, soy sauce, nutritional yeast, salt, and pepper. Cook for a few more minutes, then remove from heat and let cool.
- Preheat the oven to 200°C (400°F). On a floured surface, roll out the chilled dough to fit a small loaf pan. Leave some excess dough for the top.
- Line the loaf pan with the rolled-out dough, allowing the edges to hang over. Fill with the mushroom-lentil mixture, packing it down gently.
- Roll out the remaining dough and place it over the filling, sealing the edges tightly. Cut a few slits in the top for steam to escape and brush with plant-based milk for a golden finish.
- Bake in the preheated oven for 30-35 minutes or until the crust is golden brown. Let cool for 10 minutes before slicing.
