- Green beans - 100 grams
- Cherry tomatoes - 200 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1 small, thinly sliced
- Chickpeas - 200 grams, cooked or canned, drained and rinsed
- Black olives - 50 grams, pitted and sliced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 3 tablespoons
- Red wine vinegar - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Garlic - 1 clove, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, chickpeas, black olives, and parsley.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper to create the dressing.
- Drain the green beans from the ice water and add them to the large bowl with the other vegetables.
- Pour the dressing over the salad and toss gently to combine all ingredients evenly.
