Ingredients

  • Green beans - 100 grams
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, thinly sliced
  • Chickpeas - 200 grams, cooked or canned, drained and rinsed
  • Black olives - 50 grams, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, chickpeas, black olives, and parsley.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper to create the dressing.
  4. Drain the green beans from the ice water and add them to the large bowl with the other vegetables.
  5. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  6. Divide the salad between two plates and serve immediately, or chill in the refrigerator for 15-30 minutes for a refreshing taste.
