  • all-purpose flour - 120 grams
  • granulated sugar - 50 grams
  • baking powder - 1 teaspoon
  • salt - 1/4 teaspoon
  • almond milk - 60 milliliters
  • coconut oil - 50 grams, melted
  • vanilla extract - 1 teaspoon
  • lemon zest - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and grease a madeleine pan with a little coconut oil.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, mix the almond milk, melted coconut oil, vanilla extract, and lemon zest until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
  5. Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers spring back when touched.
