- granulated sugar - 50 grams
- baking powder - 1 teaspoon
- salt - 1/4 teaspoon
- almond milk - 60 milliliters
- coconut oil - 50 grams, melted
- vanilla extract - 1 teaspoon
- lemon zest - 1 teaspoon
Steps
- Preheat your oven to 180°C (350°F) and grease a madeleine pan with a little coconut oil.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, mix the almond milk, melted coconut oil, vanilla extract, and lemon zest until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
- Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers spring back when touched.
