- Cauliflower - 200 grams
- Carrot - 100 grams
- Zucchini - 100 grams
- Seaweed flakes (dulse or nori) - 2 tablespoons
- Silken tofu - 150 grams
- Coconut milk - 100 ml
- Nutritional yeast - 3 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Panko breadcrumbs - 30 grams
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- Steam the cauliflower, carrot, and zucchini until tender, approximately 10 minutes.
- In a blender, combine the silken tofu, coconut milk, nutritional yeast, garlic powder, onion powder, lemon juice, salt, and black pepper. Blend until smooth and creamy.
- In a large mixing bowl, combine the steamed vegetables with seaweed flakes and the creamy tofu mixture. Stir well to combine.
- Transfer the mixture to a baking dish and spread it evenly.
- In a small bowl, mix the panko breadcrumbs with olive oil and a pinch of salt. Sprinkle this mixture evenly over the top of the gratin.
- Bake in the preheated oven for 25 minutes, or until the top is golden and crispy.
- Remove from the oven, garnish with fresh parsley, and let it cool slightly before serving.
