Ingredients

  • Cauliflower - 200 grams
  • Carrot - 100 grams
  • Zucchini - 100 grams
  • Seaweed flakes (dulse or nori) - 2 tablespoons
  • Silken tofu - 150 grams
  • Coconut milk - 100 ml
  • Nutritional yeast - 3 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Panko breadcrumbs - 30 grams
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Steam the cauliflower, carrot, and zucchini until tender, approximately 10 minutes.
  3. In a blender, combine the silken tofu, coconut milk, nutritional yeast, garlic powder, onion powder, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  4. In a large mixing bowl, combine the steamed vegetables with seaweed flakes and the creamy tofu mixture. Stir well to combine.
  5. Transfer the mixture to a baking dish and spread it evenly.
  6. In a small bowl, mix the panko breadcrumbs with olive oil and a pinch of salt. Sprinkle this mixture evenly over the top of the gratin.
  7. Bake in the preheated oven for 25 minutes, or until the top is golden and crispy.
  8. Remove from the oven, garnish with fresh parsley, and let it cool slightly before serving.
