Vegan Galette des Rois

- All-purpose flour - 200 g
- Vegan butter - 100 g
- Almond flour - 100 g
- Powdered sugar - 50 g
- Maple syrup - 2 tbsp
- Almond milk - 3 tbsp
- Orange zest - 1 tsp
- Vanilla extract - 1 tsp
- Salt - 1/4 tsp
- Ground cinnamon - 1/4 tsp
- Aquafaba - 2 tbsp (from canned chickpeas)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
- Add 2 tablespoons of cold almond milk and mix until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In another bowl, mix the almond flour, powdered sugar, maple syrup, orange zest, vanilla extract, ground cinnamon, and aquafaba until smooth to create the almond cream filling.
- Roll out the chilled dough on a lightly floured surface into two circles, about 25 cm in diameter.
- Place one circle on a baking sheet lined with parchment paper, and spread the almond cream filling in the center, leaving a 2 cm border around the edges.
- Cover with the second dough circle and seal the edges by pressing with a fork or your fingers. Cut a few slits on top to allow steam to escape.
- Brush the top with a little almond milk for a golden finish.
- Bake in the preheated oven for 25-30 minutes, or until golden brown.
- Allow to cool slightly before serving.
