  • Nori sheets (seaweed) - 2 sheets, crumbled
  • Marinated artichoke hearts - 100 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Zucchini - 1 small, diced
  • Red bell pepper - 1/2, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine buckwheat flour, water, and salt, whisking until smooth to create the batter. Let it rest for 15 minutes.
  2. Heat a non-stick skillet over medium heat and add olive oil.
  3. Pour a ladleful of batter into the skillet, swirling to create a thin crepe. Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes. Repeat with remaining batter.
  4. In a separate bowl, mix together crumbled nori, marinated artichoke hearts, cherry tomatoes, zucchini, red bell pepper, parsley, lemon juice, and black pepper.
  5. Place a generous amount of the vegetable mixture onto one half of each galette, then fold the other half over to create a pocket.
  6. Cook the folded galette for another minute to warm the filling, then serve immediately.
