- Marinated artichoke hearts - 100 grams, chopped
- Cherry tomatoes - 100 grams, halved
- Zucchini - 1 small, diced
- Red bell pepper - 1/2, diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Black pepper - to taste
Steps
- In a mixing bowl, combine buckwheat flour, water, and salt, whisking until smooth to create the batter. Let it rest for 15 minutes.
- Heat a non-stick skillet over medium heat and add olive oil.
- Pour a ladleful of batter into the skillet, swirling to create a thin crepe. Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes. Repeat with remaining batter.
- In a separate bowl, mix together crumbled nori, marinated artichoke hearts, cherry tomatoes, zucchini, red bell pepper, parsley, lemon juice, and black pepper.
- Place a generous amount of the vegetable mixture onto one half of each galette, then fold the other half over to create a pocket.
