- chickpea flour - 100 grams
- water - 250 ml
- nori seaweed - 2 sheets, finely chopped
- zucchini - 100 grams, grated
- carrot - 50 grams, grated
- red bell pepper - 50 grams, diced
- green onion - 2 stalks, sliced
- nutritional yeast - 2 tablespoons
- olive oil - 2 tablespoons
- black salt (kala namak) - 1/2 teaspoon
- fresh parsley - 2 tablespoons, chopped
- lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine the chickpea flour and black salt. Gradually whisk in water until a smooth batter forms.
- Add the chopped nori, grated zucchini, grated carrot, diced red bell pepper, sliced green onion, nutritional yeast, and chopped parsley to the batter. Mix well to combine all ingredients.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour half of the batter into the skillet, spreading it evenly to form a round galette.
- Cook for about 5-7 minutes until the edges start to lift and the bottom is golden brown. Flip carefully and cook for another 5-7 minutes on the other side.
- Repeat with the remaining batter to make a second galette, adding more olive oil to the skillet if necessary.
