  • chickpea flour - 100 grams
  • water - 250 ml
  • nori seaweed - 2 sheets, finely chopped
  • zucchini - 100 grams, grated
  • carrot - 50 grams, grated
  • red bell pepper - 50 grams, diced
  • green onion - 2 stalks, sliced
  • nutritional yeast - 2 tablespoons
  • olive oil - 2 tablespoons
  • black salt (kala namak) - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine the chickpea flour and black salt. Gradually whisk in water until a smooth batter forms.
  2. Add the chopped nori, grated zucchini, grated carrot, diced red bell pepper, sliced green onion, nutritional yeast, and chopped parsley to the batter. Mix well to combine all ingredients.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour half of the batter into the skillet, spreading it evenly to form a round galette.
  4. Cook for about 5-7 minutes until the edges start to lift and the bottom is golden brown. Flip carefully and cook for another 5-7 minutes on the other side.
  5. Repeat with the remaining batter to make a second galette, adding more olive oil to the skillet if necessary.
