  • Nutritional yeast - 2 tablespoons
  • Turmeric powder - 1/4 teaspoon
  • Black salt - 1/4 teaspoon
  • Spinach - 50 grams
  • Tomato - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Vegan cheese - 50 grams, shredded
  • Fresh parsley - for garnish

Steps

  1. In a mixing bowl, combine buckwheat flour and salt. Gradually add water, whisking until smooth. Let the batter rest for 15 minutes.
  2. In another bowl, mix chickpea flour, nutritional yeast, turmeric powder, black salt, and 100 ml of water. Stir until smooth to create a chickpea batter.
  3. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Pour in a ladle of the buckwheat batter, swirling to coat the bottom evenly. Cook for about 2-3 minutes until the edges lift.
  4. Flip the galette and spread a thin layer of chickpea batter over one half of the galette. Add spinach, diced tomato, sliced mushrooms, and sprinkle with vegan cheese.
  5. Fold the galette over to cover the filling and cook for another 2-3 minutes until the vegan cheese melts.
  6. Repeat with the remaining batter and filling. Serve warm, garnished with fresh parsley.
