- Black salt - 1/4 teaspoon
- Spinach - 50 grams
- Tomato - 1 medium, diced
- Mushrooms - 100 grams, sliced
- Vegan cheese - 50 grams, shredded
- Fresh parsley - for garnish
Steps
- In a mixing bowl, combine buckwheat flour and salt. Gradually add water, whisking until smooth. Let the batter rest for 15 minutes.
- In another bowl, mix chickpea flour, nutritional yeast, turmeric powder, black salt, and 100 ml of water. Stir until smooth to create a chickpea batter.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Pour in a ladle of the buckwheat batter, swirling to coat the bottom evenly. Cook for about 2-3 minutes until the edges lift.
- Flip the galette and spread a thin layer of chickpea batter over one half of the galette. Add spinach, diced tomato, sliced mushrooms, and sprinkle with vegan cheese.
- Fold the galette over to cover the filling and cook for another 2-3 minutes until the vegan cheese melts.
- Repeat with the remaining batter and filling. Serve warm, garnished with fresh parsley.
