- Coconut oil - 70 grams, melted
- Almond milk - 60 ml
- Vanilla extract - 1 teaspoon
- Cornstarch - 25 grams
- Granulated sugar - 50 grams
- Plant-based milk - 250 ml
- Lemon zest - 1 teaspoon
- Almond extract - 1/2 teaspoon
Steps
- Preheat your oven to 180°C (350°F) and grease a 15 cm round cake pan.
- In a large bowl, mix the all-purpose flour, almond flour, powdered sugar, baking powder, and salt together.
- Add the melted coconut oil, almond milk, and vanilla extract to the dry ingredients and mix until a dough forms.
- Divide the dough in half, wrap one half in plastic wrap, and refrigerate for about 30 minutes.
- In a saucepan, whisk together the cornstarch and granulated sugar, then slowly add the plant-based milk while stirring to avoid lumps.
- Cook the mixture over medium heat, stirring constantly until it thickens, about 5-7 minutes.
- Remove from heat and stir in the lemon zest and almond extract. Let the pastry cream cool down.
- Once the dough is chilled, roll out the first half to fit the bottom of the prepared pan, pressing it gently into place.
- Spread the cooled pastry cream evenly over the dough layer.
- Roll out the second half of the dough and place it over the pastry cream, sealing the edges by pressing them together.
- Bake in the preheated oven for 30-35 minutes or until golden brown.
- Let the Gâteau Basque cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve at room temperature, optionally dusted with powdered sugar.
