Ingredients

  • All-purpose flour - 150 grams
  • Almond flour - 50 grams
  • Powdered sugar - 75 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Coconut oil - 70 grams, melted
  • Almond milk - 60 ml
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 25 grams
  • Granulated sugar - 50 grams
  • Plant-based milk - 250 ml
  • Lemon zest - 1 teaspoon
  • Almond extract - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and grease a 15 cm round cake pan.
  2. In a large bowl, mix the all-purpose flour, almond flour, powdered sugar, baking powder, and salt together.
  3. Add the melted coconut oil, almond milk, and vanilla extract to the dry ingredients and mix until a dough forms.
  4. Divide the dough in half, wrap one half in plastic wrap, and refrigerate for about 30 minutes.
  5. In a saucepan, whisk together the cornstarch and granulated sugar, then slowly add the plant-based milk while stirring to avoid lumps.
  6. Cook the mixture over medium heat, stirring constantly until it thickens, about 5-7 minutes.
  7. Remove from heat and stir in the lemon zest and almond extract. Let the pastry cream cool down.
  8. Once the dough is chilled, roll out the first half to fit the bottom of the prepared pan, pressing it gently into place.
  9. Spread the cooled pastry cream evenly over the dough layer.
  10. Roll out the second half of the dough and place it over the pastry cream, sealing the edges by pressing them together.
  11. Bake in the preheated oven for 30-35 minutes or until golden brown.
  12. Let the Gâteau Basque cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  13. Slice and serve at room temperature, optionally dusted with powdered sugar.
