  • Chickpea flour - 100 grams
  • Rice flour - 50 grams
  • Cold sparkling water - 200 milliliters
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Smoked paprika - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Vegetable oil (for frying) - 500 milliliters

Steps

  1. Prepare the vegetables by slicing the zucchini and carrot into thin strips, and trimming the green beans to equal lengths.
  2. In a mixing bowl, combine chickpea flour, rice flour, sea salt, black pepper, smoked paprika, and garlic powder.
  3. Gradually whisk in the cold sparkling water until the batter is smooth and has a slightly thick consistency.
  4. Heat the vegetable oil in a deep frying pan or pot over medium-high heat until it reaches 180°C (350°F).
  5. Dip each vegetable piece into the batter, allowing excess to drip off, then carefully place them in the hot oil.
  6. Fry in batches for about 3-4 minutes or until golden brown and crispy, turning occasionally for even cooking.
  7. Using a slotted spoon, remove the fritures from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. Serve hot with a dipping sauce of your choice, such as a vegan aioli or a tangy lemon-herb sauce.
