- Almond milk - 250 ml
- Flour (all-purpose) - 100 g
- Ground almonds - 30 g
- Maple syrup - 30 g
- Cornstarch - 1 tbsp
- Baking powder - 1 tsp
- Vanilla extract - 1 tsp
- Salt - a pinch
- Dried prunes - 100 g
- Coconut oil (melted) - 2 tbsp
Steps
- Preheat your oven to 180°C (350°F) and grease a small baking dish with coconut oil.
- In a mixing bowl, combine the flour, ground almonds, cornstarch, baking powder, and salt.
- In another bowl, whisk together the almond milk, maple syrup, vanilla extract, and melted coconut oil.
- Gradually add the wet ingredients to the dry ingredients, stirring until smooth and well combined.
- Chop the dried prunes into small pieces and fold them into the batter.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Allow to cool slightly before slicing and serving warm or at room temperature.
