Ingredients

  • Almond milk - 250 ml
  • Flour (all-purpose) - 100 g
  • Ground almonds - 30 g
  • Maple syrup - 30 g
  • Cornstarch - 1 tbsp
  • Baking powder - 1 tsp
  • Vanilla extract - 1 tsp
  • Salt - a pinch
  • Dried prunes - 100 g
  • Coconut oil (melted) - 2 tbsp

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish with coconut oil.
  2. In a mixing bowl, combine the flour, ground almonds, cornstarch, baking powder, and salt.
  3. In another bowl, whisk together the almond milk, maple syrup, vanilla extract, and melted coconut oil.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until smooth and well combined.
  5. Chop the dried prunes into small pieces and fold them into the batter.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
