- Whole grain bread - 4 slices
- Smoked tofu - 200 grams, sliced
- Vegan cheese slices - 4 slices (preferably a melting variety)
- Dijon mustard - 2 tablespoons
- Plant-based butter - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh thyme - 1 teaspoon, chopped (optional)
- Tomato - 1 medium, sliced (optional)
Steps
- Preheat a non-stick skillet over medium heat.
- Spread 1 tablespoon of plant-based butter on one side of each slice of bread.
- On the unbuttered side of two slices, spread Dijon mustard evenly.
- Layer the smoked tofu slices and vegan cheese on top of the mustard, and add sliced tomatoes and fresh thyme if using.
- Top with the remaining two slices of bread, buttered side up.
- Place the sandwiches in the skillet and cook for about 3-4 minutes or until golden brown.
- Carefully flip the sandwiches and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from heat, slice in half, and serve warm.
