Ingredients

  • Whole grain bread - 4 slices
  • Smoked tofu - 200 grams, sliced
  • Vegan cheese slices - 4 slices (preferably a melting variety)
  • Dijon mustard - 2 tablespoons
  • Plant-based butter - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh thyme - 1 teaspoon, chopped (optional)
  • Tomato - 1 medium, sliced (optional)

Steps

  1. Preheat a non-stick skillet over medium heat.
  2. Spread 1 tablespoon of plant-based butter on one side of each slice of bread.
  3. On the unbuttered side of two slices, spread Dijon mustard evenly.
  4. Layer the smoked tofu slices and vegan cheese on top of the mustard, and add sliced tomatoes and fresh thyme if using.
  5. Top with the remaining two slices of bread, buttered side up.
  6. Place the sandwiches in the skillet and cook for about 3-4 minutes or until golden brown.
  7. Carefully flip the sandwiches and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
  8. Remove from heat, slice in half, and serve warm.
