Vegan Croissants

Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 7 grams
  • Granulated sugar - 15 grams
  • Salt - 5 grams
  • Vegan butter - 100 grams (cold)
  • Plant-based milk (unsweetened) - 100 ml
  • Apple cider vinegar - 5 ml
  • Aquafaba - 30 ml (from canned chickpeas)

Steps

  1. In a small bowl, combine the plant-based milk and apple cider vinegar. Let it sit for 5 minutes to create a vegan buttermilk.
  2. In a separate large bowl, mix the all-purpose flour, active dry yeast, sugar, and salt.
  3. Add the vegan buttermilk and aquafaba to the flour mixture. Stir until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rise in a warm place for 1 hour.
  5. Once the dough has risen, roll it out into a large rectangle (about 30x20 cm).
  6. Cut the cold vegan butter into thin slices and arrange them over two-thirds of the dough rectangle.
  7. Fold the uncovered third of the dough over the butter, then fold the other third on top (like a letter). Roll it out again into a rectangle.
  8. Repeat the folding process two more times, chilling the dough for 30 minutes in the fridge between folds.
  9. After the final fold and chill, roll the dough into a large rectangle again and cut it into triangles.
  10. Roll each triangle from the base to the tip to form croissants. Place them on a lined baking sheet.
  11. Cover the croissants and let them rise for another 30 minutes.
  12. Preheat the oven to 200°C (400°F).
  13. Bake the croissants for 15-20 minutes or until golden brown. Let cool slightly before serving.
