Vegan Croissants

Ingredients
- All-purpose flour - 250 grams
- Active dry yeast - 7 grams
- Granulated sugar - 15 grams
- Salt - 5 grams
- Vegan butter - 100 grams (cold)
- Plant-based milk (unsweetened) - 100 ml
- Apple cider vinegar - 5 ml
- Aquafaba - 30 ml (from canned chickpeas)
Steps
- In a small bowl, combine the plant-based milk and apple cider vinegar. Let it sit for 5 minutes to create a vegan buttermilk.
- In a separate large bowl, mix the all-purpose flour, active dry yeast, sugar, and salt.
- Add the vegan buttermilk and aquafaba to the flour mixture. Stir until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rise in a warm place for 1 hour.
- Once the dough has risen, roll it out into a large rectangle (about 30x20 cm).
- Cut the cold vegan butter into thin slices and arrange them over two-thirds of the dough rectangle.
- Fold the uncovered third of the dough over the butter, then fold the other third on top (like a letter). Roll it out again into a rectangle.
- Repeat the folding process two more times, chilling the dough for 30 minutes in the fridge between folds.
- After the final fold and chill, roll the dough into a large rectangle again and cut it into triangles.
- Roll each triangle from the base to the tip to form croissants. Place them on a lined baking sheet.
- Cover the croissants and let them rise for another 30 minutes.
- Preheat the oven to 200°C (400°F).
- Bake the croissants for 15-20 minutes or until golden brown. Let cool slightly before serving.
