- fresh orange juice - 100 milliliters
- brown sugar - 2 tablespoons
- grand marnier or orange liqueur - 2 tablespoons (optional)
- fresh mint leaves - for garnish
Steps
- In a mixing bowl, whisk together the flour, almond milk, aquafaba, maple syrup, vanilla extract, and orange zest until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a small amount of coconut oil to coat.
- Pour about 1/4 cup of the batter into the skillet, swirling it to create a thin layer. Cook for 2-3 minutes until the edges lift and the bottom is lightly golden, then flip and cook for another 1-2 minutes. Repeat with remaining batter.
- In a saucepan, combine fresh orange juice and brown sugar over medium heat. Stir until the sugar dissolves and the mixture thickens slightly, about 5 minutes.
- If using, add the grand marnier to the sauce and stir to combine. Remove from heat.
- To assemble, fold each crepe into quarters and place them in the pan with the orange sauce, allowing them to soak for a minute.
- Serve warm, drizzled with additional orange sauce and garnished with fresh mint leaves.
