  • fresh orange juice - 100 milliliters
  • brown sugar - 2 tablespoons
  • grand marnier or orange liqueur - 2 tablespoons (optional)
  • fresh mint leaves - for garnish

Steps

  1. In a mixing bowl, whisk together the flour, almond milk, aquafaba, maple syrup, vanilla extract, and orange zest until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick skillet over medium heat and add a small amount of coconut oil to coat.
  3. Pour about 1/4 cup of the batter into the skillet, swirling it to create a thin layer. Cook for 2-3 minutes until the edges lift and the bottom is lightly golden, then flip and cook for another 1-2 minutes. Repeat with remaining batter.

  5. If using, add the grand marnier to the sauce and stir to combine. Remove from heat.
