Ingredients

  • all-purpose flour - 100 grams
  • plant-based milk (almond or soy) - 250 milliliters
  • ground flaxseed - 1 tablespoon
  • maple syrup - 1 tablespoon
  • vanilla extract - 1 teaspoon
  • coconut oil (for cooking) - 1 tablespoon
  • orange juice - 50 milliliters
  • orange zest - 1 teaspoon
  • vegan butter - 1 tablespoon
  • powdered sugar (for serving) - to taste

Steps

  1. In a mixing bowl, combine the all-purpose flour, ground flaxseed, and a pinch of salt.
  2. In a separate bowl, whisk together the plant-based milk, maple syrup, and vanilla extract.
  3. Gradually pour the wet ingredients into the dry ingredients, mixing until smooth. Let the batter rest for 10 minutes.
  4. Heat a non-stick skillet over medium heat and add a little coconut oil.
  5. Pour about 1/4 cup of the batter into the skillet, swirling to create a thin layer. Cook for 2-3 minutes until the edges lift and the bottom is golden.
  6. Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, adding more coconut oil as needed.
  7. In a small saucepan, melt the vegan butter over medium heat. Add the orange juice and zest, stirring until combined.
  8. Drizzle the orange sauce over the cooked crêpes and fold them into quarters.
  9. Serve warm, dusted with powdered sugar.
