- maple syrup - 1 tablespoon
- vanilla extract - 1 teaspoon
- coconut oil (for cooking) - 1 tablespoon
- orange juice - 50 milliliters
- orange zest - 1 teaspoon
- vegan butter - 1 tablespoon
- powdered sugar (for serving) - to taste
Steps
- In a mixing bowl, combine the all-purpose flour, ground flaxseed, and a pinch of salt.
- In a separate bowl, whisk together the plant-based milk, maple syrup, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, mixing until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a little coconut oil.
- Pour about 1/4 cup of the batter into the skillet, swirling to create a thin layer. Cook for 2-3 minutes until the edges lift and the bottom is golden.
- Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, adding more coconut oil as needed.
- In a small saucepan, melt the vegan butter over medium heat. Add the orange juice and zest, stirring until combined.
- Drizzle the orange sauce over the cooked crêpes and fold them into quarters.
- Serve warm, dusted with powdered sugar.
