  • Mushrooms (sliced) - 100 grams
  • Cherry tomatoes (halved) - 100 grams
  • Lemon juice - 1 tablespoon
  • Fresh herbs (parsley or chives, chopped) - 2 tablespoons

Steps

  1. In a bowl, mix the buckwheat flour, water, salt, and black pepper until smooth to form the crêpe batter. Let it rest for 15 minutes.
  2. While the batter rests, rehydrate the seaweed in warm water for about 5 minutes, then drain and chop into small pieces.
  3. In a pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the sliced mushrooms and cook for 5 minutes until they are soft. Then, add the fresh spinach and chopped seaweed and cook for another 3-4 minutes until the spinach is wilted.
  5. Stir in the halved cherry tomatoes and lemon juice, cooking for an additional 2 minutes. Season with salt and pepper to taste, then remove from heat.
  6. In another non-stick pan, heat 1 teaspoon of olive oil over medium heat. Pour in a ladle of crêpe batter, swirling to coat the pan evenly. Cook for about 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
  7. Repeat the process until all batter is used, adding more oil as necessary between crêpes.
