- Water - 6 tablespoons

- Olive oil - 1 tablespoon
- Spinach - 50 grams
- Mushrooms - 100 grams, sliced
- Bell pepper - 50 grams, diced
- Nutritional yeast - 2 tablespoons
- Black pepper - to taste
Steps
- In a small bowl, mix the flaxseed meal with water and let it sit for 5 minutes to thicken.
- In a mixing bowl, combine whole wheat flour and salt. Gradually whisk in the almond milk and the flaxseed mixture until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a teaspoon of olive oil. Pour about 1/4 cup of the crêpe batter into the skillet, swirling to cover the bottom evenly.
- Cook for 2-3 minutes until the edges begin to lift and the bottom is lightly browned. Flip and cook for an additional 1-2 minutes on the other side. Repeat with remaining batter, adding oil as needed.
- In a separate pan, sauté the sliced mushrooms and bell pepper in a teaspoon of olive oil until tender. Add the spinach and cook until wilted. Season with black pepper and stir in nutritional yeast.
- To serve, place the vegetable mixture in the center of each crêpe, fold, and enjoy warm.
