  • Spinach - 50 grams
  • Mushrooms - 100 grams, sliced
  • Bell pepper - 50 grams, diced
  • Nutritional yeast - 2 tablespoons
  • Black pepper - to taste

Steps

  1. In a small bowl, mix the flaxseed meal with water and let it sit for 5 minutes to thicken.
  2. In a mixing bowl, combine whole wheat flour and salt. Gradually whisk in the almond milk and the flaxseed mixture until smooth. Let the batter rest for 10 minutes.
  3. Heat a non-stick skillet over medium heat and add a teaspoon of olive oil. Pour about 1/4 cup of the crêpe batter into the skillet, swirling to cover the bottom evenly.
