- King oyster mushrooms - 200 grams
- Olive oil - 2 tablespoons
- Shallot - 1, finely chopped
- Garlic - 2 cloves, minced
- White wine - 100 ml
- Coconut cream - 100 ml
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Vegan breadcrumbs - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- Clean the king oyster mushrooms and slice them into scallop-sized pieces.
- In a skillet, heat olive oil over medium heat and sauté shallots until translucent, about 3 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in the white wine and let it reduce by half, about 5 minutes.
- Stir in the coconut cream, nutritional yeast, lemon juice, thyme, salt, and pepper. Cook for 3-4 minutes until combined and thickened.
- Add the sliced mushrooms to the skillet, tossing them gently in the sauce. Cook for an additional 5 minutes until the mushrooms are tender.
- Transfer the mushroom mixture into two individual baking dishes or ramekins.
- Sprinkle vegan breadcrumbs on top of each dish.
- Bake in the preheated oven for 10-12 minutes, until the breadcrumbs are golden and crispy.
- Garnish with fresh parsley before serving.
