Ingredients

  • King oyster mushrooms - 200 grams
  • Olive oil - 2 tablespoons
  • Shallot - 1, finely chopped
  • Garlic - 2 cloves, minced
  • White wine - 100 ml
  • Coconut cream - 100 ml
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Vegan breadcrumbs - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Clean the king oyster mushrooms and slice them into scallop-sized pieces.
  3. In a skillet, heat olive oil over medium heat and sauté shallots until translucent, about 3 minutes.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Pour in the white wine and let it reduce by half, about 5 minutes.
  6. Stir in the coconut cream, nutritional yeast, lemon juice, thyme, salt, and pepper. Cook for 3-4 minutes until combined and thickened.
  7. Add the sliced mushrooms to the skillet, tossing them gently in the sauce. Cook for an additional 5 minutes until the mushrooms are tender.
  8. Transfer the mushroom mixture into two individual baking dishes or ramekins.
  9. Sprinkle vegan breadcrumbs on top of each dish.
  10. Bake in the preheated oven for 10-12 minutes, until the breadcrumbs are golden and crispy.
  11. Garnish with fresh parsley before serving.
