Ingredients
- King oyster mushrooms - 200 grams
- Olive oil - 2 tablespoons
- Shallot - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Coconut cream - 100 ml
- White wine - 50 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, fresh or dried
- Salt - to taste
- Black pepper - to taste
- Pasta (such as linguine) - 150 grams
- Vegetable broth - 200 ml
Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente, then drain and set aside.
- Meanwhile, slice the king oyster mushrooms into scallop-like rounds.
- In a large skillet, heat the olive oil over medium heat, then add the chopped shallot and cook until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are golden, about 5-7 minutes.
- Pour in the white wine, scraping the bottom of the skillet to deglaze, and let it simmer for 2-3 minutes.
- Stir in the coconut cream, vegetable broth, lemon juice, thyme, salt, and black pepper. Allow the mixture to simmer for another 5 minutes until thickened slightly.
- Add the cooked pasta into the skillet, tossing to coat it with the creamy mushroom sauce.
- Remove from heat and stir in the chopped parsley just before serving.
