Ingredients

  • King oyster mushrooms - 200 grams
  • Olive oil - 2 tablespoons
  • Shallot - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Coconut cream - 100 ml
  • White wine - 50 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, fresh or dried
  • Salt - to taste
  • Black pepper - to taste
  • Pasta (such as linguine) - 150 grams
  • Vegetable broth - 200 ml

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente, then drain and set aside.
  2. Meanwhile, slice the king oyster mushrooms into scallop-like rounds.
  3. In a large skillet, heat the olive oil over medium heat, then add the chopped shallot and cook until translucent, about 3-4 minutes.
  4. Add the minced garlic and sliced mushrooms to the skillet, cooking until the mushrooms are golden, about 5-7 minutes.
  5. Pour in the white wine, scraping the bottom of the skillet to deglaze, and let it simmer for 2-3 minutes.
  6. Stir in the coconut cream, vegetable broth, lemon juice, thyme, salt, and black pepper. Allow the mixture to simmer for another 5 minutes until thickened slightly.
  7. Add the cooked pasta into the skillet, tossing to coat it with the creamy mushroom sauce.
  8. Remove from heat and stir in the chopped parsley just before serving.
