  • Mushrooms - 300 grams, sliced
  • Carrots - 100 grams, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Red wine - 250 ml
  • Vegetable broth - 200 ml
  • Soy sauce - 2 tablespoons
  • Tomato paste - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
  3. Stir in the sliced mushrooms and cook for another 5 minutes, allowing them to release their moisture.
  4. Add the red wine, vegetable broth, soy sauce, tomato paste, thyme, bay leaf, salt, and black pepper. Bring to a boil.
  5. Reduce the heat to low and let the mixture simmer for 25 minutes, stirring occasionally.
  6. Remove the bay leaf and adjust seasoning to taste.
  7. Serve hot, garnished with fresh parsley.
