- Mushrooms - 300 grams, sliced
- Carrots - 100 grams, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Celery - 1 stalk, diced
- Red wine - 250 ml
- Vegetable broth - 200 ml
- Soy sauce - 2 tablespoons
- Tomato paste - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
- Stir in the sliced mushrooms and cook for another 5 minutes, allowing them to release their moisture.
- Add the red wine, vegetable broth, soy sauce, tomato paste, thyme, bay leaf, salt, and black pepper. Bring to a boil.
- Reduce the heat to low and let the mixture simmer for 25 minutes, stirring occasionally.
- Remove the bay leaf and adjust seasoning to taste.
- Serve hot, garnished with fresh parsley.
