Vegan Éclair

Ingredients

  • All-purpose flour - 60 grams
  • Water - 75 ml
  • Coconut oil - 30 grams
  • Ground flaxseed - 1 tablespoon
  • Almond milk - 150 ml
  • Sugar - 50 grams
  • Cornstarch - 25 grams
  • Vanilla extract - 1 teaspoon
  • Dark chocolate (vegan) - 50 grams
  • Coconut cream - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a saucepan, combine water and coconut oil, and bring to a boil.
  3. Add the all-purpose flour to the boiling mixture and stir vigorously until a dough forms.
  4. Remove from heat and allow to cool slightly, then add the ground flaxseed mixed with 3 tablespoons of water to the dough and mix until smooth.
  5. Transfer the dough to a piping bag and pipe 10 cm long strips onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes until the éclairs are golden and puffed up. Allow to cool on a wire rack.
  7. In another saucepan, whisk together almond milk, sugar, cornstarch, and vanilla extract over medium heat until thickened to a custard-like consistency. Remove from heat and let cool.
  8. Once the pastry cream has cooled, fill a piping bag with the cream and inject it into each cooled éclair from one end.
  9. In a microwave or double boiler, melt the dark chocolate and coconut cream together until smooth.
  10. Drizzle or dip the tops of each filled éclair into the chocolate glaze, and let set before serving.
