Ingredients
- All-purpose flour - 60 grams
- Water - 75 ml
- Coconut oil - 30 grams
- Ground flaxseed - 1 tablespoon
- Almond milk - 150 ml
- Sugar - 50 grams
- Cornstarch - 25 grams
- Vanilla extract - 1 teaspoon
- Dark chocolate (vegan) - 50 grams
- Coconut cream - 50 grams
Steps
- Preheat the oven to 200°C (400°F).
- In a saucepan, combine water and coconut oil, and bring to a boil.
- Add the all-purpose flour to the boiling mixture and stir vigorously until a dough forms.
- Remove from heat and allow to cool slightly, then add the ground flaxseed mixed with 3 tablespoons of water to the dough and mix until smooth.
- Transfer the dough to a piping bag and pipe 10 cm long strips onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until the éclairs are golden and puffed up. Allow to cool on a wire rack.
- In another saucepan, whisk together almond milk, sugar, cornstarch, and vanilla extract over medium heat until thickened to a custard-like consistency. Remove from heat and let cool.
- Once the pastry cream has cooled, fill a piping bag with the cream and inject it into each cooled éclair from one end.
- In a microwave or double boiler, melt the dark chocolate and coconut cream together until smooth.
- Drizzle or dip the tops of each filled éclair into the chocolate glaze, and let set before serving.
