Ingredients

  • Almond milk - 200 ml
  • All-purpose flour - 50 g
  • Maple syrup - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Cherries (pitted, fresh or frozen) - 150 g
  • Powdered sugar (for dusting) - to taste

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish (about 20 cm) with a little oil.
  2. In a mixing bowl, combine the almond milk, all-purpose flour, maple syrup, cornstarch, baking powder, vanilla extract, and a pinch of salt. Whisk until smooth and well combined.
  3. Pour half of the batter into the prepared baking dish and bake for 10 minutes until slightly set.
  4. Remove from the oven and evenly distribute the cherries over the partially baked batter.
  5. Pour the remaining batter over the cherries and return to the oven.
  6. Bake for an additional 20-25 minutes or until the clafoutis is puffed and golden on top.
  7. Allow to cool slightly, then dust with powdered sugar before serving.
