- Almond milk - 200 ml
- All-purpose flour - 50 g
- Maple syrup - 2 tablespoons
- Cornstarch - 1 tablespoon
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Cherries (pitted, fresh or frozen) - 150 g
- Powdered sugar (for dusting) - to taste
Steps
- Preheat the oven to 180°C (350°F) and grease a small baking dish (about 20 cm) with a little oil.
- In a mixing bowl, combine the almond milk, all-purpose flour, maple syrup, cornstarch, baking powder, vanilla extract, and a pinch of salt. Whisk until smooth and well combined.
- Pour half of the batter into the prepared baking dish and bake for 10 minutes until slightly set.
- Remove from the oven and evenly distribute the cherries over the partially baked batter.
- Pour the remaining batter over the cherries and return to the oven.
- Bake for an additional 20-25 minutes or until the clafoutis is puffed and golden on top.
- Allow to cool slightly, then dust with powdered sugar before serving.
