Ingredients

  • All-purpose flour - 200g
  • Vegan butter - 100g (cold and cubed)
  • Cold water - 60ml
  • Salt - 1/4 tsp
  • Apples - 2 medium (peeled, cored, and diced)
  • Brown sugar - 50g
  • Cinnamon - 1/2 tsp
  • Lemon juice - 1 tsp
  • Cornstarch - 1 tbsp
  • Plant-based milk - for brushing

Steps

  1. In a mixing bowl, combine the flour and salt. Add the cold cubed vegan butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until a dough forms. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. In a saucepan, combine the diced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Cook over medium heat for about 5-7 minutes until the apples are slightly softened and coated in the mixture. Remove from heat and let it cool.
  4. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  5. Roll out the chilled dough on a floured surface to about 3mm thick. Cut out circles of about 10cm diameter.
  6. Place a tablespoon of the apple filling on one half of each circle, leaving space around the edges. Fold the other half over the filling and pinch the edges to seal. You can use a fork to crimp the edges for a decorative touch.
  7. Place the chaussons on the prepared baking sheet. Brush the tops with plant-based milk for a golden finish.
  8. Bake in the preheated oven for about 20-25 minutes or until golden brown. Allow to cool slightly before serving.
