Ingredients

  • Almond milk - 200 ml
  • All-purpose flour - 100 g
  • Granulated sugar - 50 g
  • Unsweetened applesauce - 30 g
  • Vanilla extract - 1 tsp
  • Aquafaba - 30 ml
  • Baking powder - 1/2 tsp
  • Salt - 1/4 tsp
  • Oil (for greasing) - 1 tbsp

Steps

  1. Preheat your oven to 200°C (392°F) and grease the canelé molds thoroughly with oil.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the almond milk, applesauce, aquafaba, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Let the batter rest for 30 minutes at room temperature to allow the flavors to meld.
  6. Fill each prepared canelé mold about 3/4 full with the batter.
  7. Bake in the preheated oven for 25-30 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Remove from the oven and let the canelés cool in the molds for 10 minutes before transferring them to a wire rack to cool completely.
