Ingredients

  • All-purpose flour - 250 grams
  • Almond milk - 100 milliliters
  • Flaxseed meal - 15 grams
  • Maple syrup - 30 grams
  • Coconut oil (melted) - 30 grams
  • Active dry yeast - 7 grams
  • Salt - 5 grams
  • Vanilla extract - 5 milliliters

Steps

  1. In a small bowl, mix the flaxseed meal with 45ml of water and let it sit for 10 minutes to thicken.
  2. In a separate bowl, warm the almond milk slightly and stir in the maple syrup and active dry yeast. Let it sit for about 5 minutes until frothy.
  3. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture, flaxseed mixture, melted coconut oil, and vanilla extract.
  4. Mix the ingredients together until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  6. Preheat your oven to 180°C (350°F). Once the dough has risen, punch it down and shape it into a loaf or divide it into small rolls.
  7. Place the shaped dough onto a parchment-lined baking tray. Cover and let it rise again for about 30 minutes.
  8. Bake in the preheated oven for 20-25 minutes until golden brown. Allow to cool slightly before serving.
