- Canned chickpeas - 400 grams, drained and rinsed
- Nori sheets - 2 sheets, torn into small pieces
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Potato - 200 grams, peeled and diced
- Vegetable broth - 100 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- In a medium pot, boil the diced potato in salted water until tender, about 15 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the drained chickpeas, torn nori, cooked potato, vegetable broth, lemon juice, nutritional yeast, salt, and black pepper to the skillet.
- Using a potato masher or fork, mash the mixture until creamy but still slightly chunky, about 3-4 minutes.
- Taste and adjust seasoning if needed. Remove from heat and let cool slightly.
- Serve warm, garnished with fresh parsley, and enjoy with crusty bread or over toasted baguette slices.
