Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Nori sheets - 2 sheets, torn into small pieces
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Potato - 200 grams, peeled and diced
  • Vegetable broth - 100 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. In a medium pot, boil the diced potato in salted water until tender, about 15 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the drained chickpeas, torn nori, cooked potato, vegetable broth, lemon juice, nutritional yeast, salt, and black pepper to the skillet.
  4. Using a potato masher or fork, mash the mixture until creamy but still slightly chunky, about 3-4 minutes.
  5. Taste and adjust seasoning if needed. Remove from heat and let cool slightly.
  6. Serve warm, garnished with fresh parsley, and enjoy with crusty bread or over toasted baguette slices.
