- Chickpeas - 200 grams (cooked)
- Nori seaweed sheets - 2 sheets
- Red onion - 50 grams (finely chopped)
- Garlic - 2 cloves (minced)
- Fresh parsley - 30 grams (chopped)
- Lemon juice - 2 tablespoons
- Chickpea flour - 50 grams
- Ground flaxseed - 1 tablespoon
- Water - 3 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Paprika - 1/2 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, mash the cooked chickpeas until mostly smooth, leaving some chunks for texture.
- In a food processor, combine the nori sheets, red onion, garlic, and parsley. Pulse until finely chopped.
- Add the nori mixture to the mashed chickpeas along with lemon juice, chickpea flour, ground flaxseed mixed with water, salt, black pepper, and paprika. Mix until well combined.
- Form the mixture into small balls, about 2.5 cm in diameter.
- Place the balls on a lined baking sheet and brush lightly with olive oil.
- Bake in the preheated oven for 20-25 minutes, until golden brown and firm to the touch, turning halfway through for even cooking.
- Serve warm with a side of vegan tartar sauce or a fresh salad.
