- Trout fillets - 2 x 150g
- Unsalted butter - 50g
- Almonds, sliced - 50g
- Garlic, minced - 1 clove
- Lemon juice - 1 tablespoon
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a large skillet, melt 25g of butter over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Season the trout fillets with salt and black pepper on both sides.
- Place the trout fillets in the skillet, skin side down, and cook for 5-6 minutes until the skin is crispy.
- Carefully flip the fillets and cook for another 3-4 minutes until the flesh is opaque and flakes easily.
- Remove the trout from the skillet and place on a serving plate.
- In the same skillet, add the remaining 25g of butter and the sliced almonds.
- Toast the almonds for about 2-3 minutes until golden brown, stirring frequently.
- Remove from heat, add lemon juice and chopped parsley, and mix well.
- Spoon the almond mixture over the cooked trout fillets and serve immediately.
