- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Honey - 1 tablespoon
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat your barbecue grill to medium-high heat.
- In a small bowl, mix together the olive oil, minced garlic, chopped thyme, chopped rosemary, smoked paprika, salt, and black pepper to create a marinade.
- Score the skin of the duck breasts in a criss-cross pattern without cutting into the meat. This will help the fat render and the skin become crispy.
- Rub the marinade all over the duck breasts, making sure to get it into the scored skin. Let it marinate for 15 minutes at room temperature.
- Place the duck breasts skin-side down on the grill and cook for about 8-10 minutes, allowing the fat to render and the skin to become crispy.
- Flip the duck breasts and cook for another 5-7 minutes, or until they reach an internal temperature of 65°C (149°F) for medium-rare.
- In the last few minutes of cooking, brush the duck breasts with a mixture of honey and balsamic vinegar to glaze them.
- Remove the duck from the grill and let it rest for 5 minutes before slicing.
- Serve the duck sliced, drizzled with any remaining glaze, and enjoy with your favorite sides.
