Ingredients

  • Ground pork - 400 grams
  • Garlic cloves - 2, minced
  • Fresh thyme - 1 tablespoon, chopped
  • Fresh rosemary - 1 tablespoon, chopped
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Coconut oil - 1 tablespoon
  • Onion - 1, diced
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Carrot - 1, diced
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large bowl, combine the ground pork, minced garlic, thyme, rosemary, smoked paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Form the mixture into 4 sausage patties, about 2 cm thick.
  3. Heat coconut oil in a skillet over medium heat. Once hot, add the sausage patties and cook for about 5-6 minutes on each side until golden brown and cooked through.
  4. In the same skillet, after removing the sausages, add diced onion, red bell pepper, zucchini, and carrot. Sauté for about 8-10 minutes, or until the vegetables are tender.
  5. Serve the sausages on a plate, topped with the sautéed vegetables and garnished with fresh parsley.
