- Ground pork - 400 grams
- Garlic cloves - 2, minced
- Fresh thyme - 1 tablespoon, chopped
- Fresh rosemary - 1 tablespoon, chopped
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Coconut oil - 1 tablespoon
- Onion - 1, diced
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Carrot - 1, diced
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large bowl, combine the ground pork, minced garlic, thyme, rosemary, smoked paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Form the mixture into 4 sausage patties, about 2 cm thick.
- Heat coconut oil in a skillet over medium heat. Once hot, add the sausage patties and cook for about 5-6 minutes on each side until golden brown and cooked through.
- In the same skillet, after removing the sausages, add diced onion, red bell pepper, zucchini, and carrot. Sauté for about 8-10 minutes, or until the vegetables are tender.
- Serve the sausages on a plate, topped with the sautéed vegetables and garnished with fresh parsley.
