Ingredients

  • Cherry tomatoes - 300 grams
  • Puff pastry - 1 sheet (approximately 250 grams)
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Fresh thyme - 2 sprigs
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Goat cheese - 50 grams (optional)

Steps

  1. Preheat the BBQ grill to medium heat.
  2. In a large skillet, heat the olive oil over medium heat. Add the cherry tomatoes, salt, black pepper, balsamic vinegar, and brown sugar. Cook for about 10-12 minutes until the tomatoes start to soften and caramelize.
  3. Remove the skillet from the heat and add the fresh thyme. Stir gently to combine.
  4. Roll out the puff pastry sheet on a floured surface to fit your skillet. Place the cooked tomatoes evenly in the skillet, then carefully lay the puff pastry over the tomatoes, tucking the edges down the sides of the skillet.
  5. Use a fork to poke a few holes in the pastry to allow steam to escape.
  6. Place the skillet on the BBQ grill and cook for about 20-25 minutes, or until the pastry is golden brown and puffed.
  7. Carefully remove the skillet from the grill and let it cool for a few minutes. Invert the tart onto a large plate, allowing the tomatoes to be on top.
  8. If desired, crumble goat cheese over the warm tart before serving.
