Ingredients

  • Baguette - 1 small (about 200g)
  • Ripe tomatoes - 200g, diced
  • Fresh basil leaves - 10g, chopped
  • Garlic - 1 clove, minced
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your barbecue grill to medium heat.
  2. Slice the baguette into 1.5 cm thick slices and brush one side lightly with olive oil.
  3. Place the oiled side of the baguette slices on the grill and cook for about 2-3 minutes until golden brown and crispy.
  4. In a mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, 1 tablespoon of olive oil, salt, and black pepper. Mix well.
  5. Once the bread is grilled, remove it from the grill and place it on a serving platter, grilled side up.
  6. Top each slice of grilled bread with the tomato and basil mixture generously.
  7. Drizzle with the remaining olive oil before serving.
