  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese (grated) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Thinly slice the zucchini, eggplant, tomato, and bell pepper into even rounds.
  3. Finely chop the garlic and mix it with olive oil, thyme, salt, and black pepper.
  4. In a baking dish, spread a thin layer of the garlic olive oil mixture on the bottom.
  5. Arrange the sliced vegetables in an alternating pattern, standing them upright to create a colorful display.
  6. Drizzle the remaining garlic olive oil mixture over the top of the arranged vegetables.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
  8. Remove the foil, sprinkle grated Parmesan cheese on top, and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  9. Allow to cool slightly before serving.
