- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese (grated) - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- Thinly slice the zucchini, eggplant, tomato, and bell pepper into even rounds.
- Finely chop the garlic and mix it with olive oil, thyme, salt, and black pepper.
- In a baking dish, spread a thin layer of the garlic olive oil mixture on the bottom.
- Arrange the sliced vegetables in an alternating pattern, standing them upright to create a colorful display.
- Drizzle the remaining garlic olive oil mixture over the top of the arranged vegetables.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle grated Parmesan cheese on top, and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
- Allow to cool slightly before serving.
