Ingredients

  • White fish fillet (such as cod or sole) - 200 grams
  • Smoked salmon - 100 grams
  • Eggs - 2 large
  • Heavy cream - 100 ml
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Gelatin sheets - 2 sheets (or 4 grams powdered gelatin)
  • Water - 100 ml (for gelatin)

Steps

  1. Preheat the oven to 160°C (320°F).
  2. Soak the gelatin sheets in cold water for about 5-10 minutes until soft. If using powdered gelatin, dissolve it in 100 ml of warm water.
  3. In a food processor, blend the white fish fillet, smoked salmon, eggs, heavy cream, dill, parsley, lemon juice, salt, and pepper until smooth.
  4. Gently heat the softened gelatin in a small saucepan until melted, then mix it into the fish mixture until fully combined.
  5. Line a small terrine mold or loaf pan with plastic wrap, leaving excess hanging over the edges.
  6. Pour the fish mixture into the prepared mold, smoothing the top with a spatula.
  7. Cover with plastic wrap and place the mold in a larger baking dish filled with water (water bath) to prevent drying out.
  8. Bake in the preheated oven for about 45 minutes, or until the terrine is set and firm to the touch.
  9. Remove from the oven and let the terrine cool to room temperature, then refrigerate for at least 2 hours before serving.
  10. Once chilled, carefully remove the terrine from the mold, slice, and serve with a light salad or a drizzle of vinaigrette.
