Ingredients
- Wild boar meat - 200 grams
- Venison - 100 grams
- Duck breast - 100 grams
- Pork fatback - 50 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Bay leaf - 1
- Cognac - 30 ml
- Salt - 5 grams
- Black pepper - 2 grams
- Nutmeg - 1/4 teaspoon
- Egg - 1, beaten
- Pistachios - 30 grams, chopped
- Bacon - 2 slices, cooked and crumbled
Steps
- Preheat the oven to 160°C (320°F).
- In a large bowl, combine the wild boar, venison, duck breast, and pork fatback. Grind the mixture using a meat grinder or finely chop by hand.
- In a skillet, sauté the chopped onion and garlic over medium heat until translucent. Allow to cool, then add to the meat mixture.
- Add the chopped thyme, bay leaf, cognac, salt, black pepper, nutmeg, beaten egg, pistachios, and crumbled bacon to the meat mixture. Mix thoroughly until combined.
- Line a terrine mold or loaf pan with parchment paper, leaving overhang for easy removal. Pack the meat mixture into the mold, pressing down firmly to remove air pockets.
- Cover the top with more parchment paper and place the mold in a baking dish filled with hot water to create a bain-marie.
- Bake in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 70°C (160°F).
- Remove from the oven and let it cool at room temperature, then refrigerate for at least 24 hours to set.
- When ready to serve, remove the terrine from the mold using the parchment overhang, slice into thick pieces, and serve with a side of pickles or crusty bread.
