Ingredients

  • Wild boar meat - 200 grams
  • Venison - 100 grams
  • Duck breast - 100 grams
  • Pork fatback - 50 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Bay leaf - 1
  • Cognac - 30 ml
  • Salt - 5 grams
  • Black pepper - 2 grams
  • Nutmeg - 1/4 teaspoon
  • Egg - 1, beaten
  • Pistachios - 30 grams, chopped
  • Bacon - 2 slices, cooked and crumbled

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a large bowl, combine the wild boar, venison, duck breast, and pork fatback. Grind the mixture using a meat grinder or finely chop by hand.
  3. In a skillet, sauté the chopped onion and garlic over medium heat until translucent. Allow to cool, then add to the meat mixture.
  4. Add the chopped thyme, bay leaf, cognac, salt, black pepper, nutmeg, beaten egg, pistachios, and crumbled bacon to the meat mixture. Mix thoroughly until combined.
  5. Line a terrine mold or loaf pan with parchment paper, leaving overhang for easy removal. Pack the meat mixture into the mold, pressing down firmly to remove air pockets.
  6. Cover the top with more parchment paper and place the mold in a baking dish filled with hot water to create a bain-marie.
  7. Bake in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 70°C (160°F).
  8. Remove from the oven and let it cool at room temperature, then refrigerate for at least 24 hours to set.
  9. When ready to serve, remove the terrine from the mold using the parchment overhang, slice into thick pieces, and serve with a side of pickles or crusty bread.
